Fat Turkey Chocolate was featured in Tribeza Magazine's February 2005 issue

A local Texas woman has taken that cultish quality(a following) and turned it into a business. While still a dorm-living student at the University of Texas, Jennifer Holberg created a following of her own with her handmade truffles. She has since established Fat Turkey Chocolates and sells numerous varieties of truffles by special order during the busiest holiday seasons.

" I took a class on chocolate-making with my mom," Holberg says, "and when we finished, we went home and tried the recipes and decided we could do it even better."

She started by getting the recipes down to a science and creating new flavors. Then she marketed her truffles by creating t-shirts with her company name and giving them to her firends in the all-female Scottish Rite dorm to wear around campus. She works out of her parents home in Bastrop and takes orders over her web site. "It's been word of mouth really, and the success has been overwhelming sometimes," she says.
